Recipe For Buttermilk Pie

Here’s a story about Buttermilk Pie.

A few years ago, my friend went to Texas for a week. She ate lunch in the same diner every afternoon for a week, and each time, she topped her meal off with their buttermilk pie. She had never tasted it before. By the end of the week, she managed to wangle the recipe from the cook.

When she returned to work, she laid the recipe on my desk and said, “Make it. You won’t be sorry.” I said, “Why don’t you make it?” She said, “I know it will taste better if you make it for me.”

The truth is anyone can make it. And I’ve never tasted anything quite like it. The best part – it’s mistake-proof. Take that as my word of honor, since I am not and never will be a superb baker. Great cook–yes! Baker–no!

You’ve got to try this.

Buttermilk Pie

1 stick butter (1/2 cup)
3 tablespoons flour
1 cup sugar
1 cup buttermilk
3 eggs
1 tsp real vanilla
pinch of salt
1 pie shell (9 inch) (I use a ready made Pillsbury shell. You thaw it and then roll it into the pie pan–easy)

Mix all ingredients together. Pour into pie shell. Bake at 400 degrees for 40-50 minutes. Top of pie will be golden brown.

San Francisco, California

When I travel I like to visit places I have read about in a book or magazine. I become the ultimate tourist. My intent is to take the words off the page and experience them in real life. San Francisco is a prime destination where you can do just that.

For one thing, a lot of stuff you’ve read about is within walking distance of each other. You can visit the sea lions, listen to their loud grunting, and watch them splash and play off the end of Pier 39. Other things the Pier has to offer: a marketplace, restaurants, street performers and loads of shops.

You won’t want to miss Fisherman’s Wharf. It’s only one or two blocks away from Pier 39 and the walk along the Bay is lovely. You’ll see picture perfect views of the Golden Gate Bridge and Alcatraz. Just seeing the Golden Gate Bridge will give you a warm, fuzzy feeling. It’s a man-made phenomenon.

Tours. You want to take a tour? There are all sorts of tours: Seqway Tours, Motorcoach Tours, Bay Cruise Tours, Double Decker Trolley Tours, Culinary Tours, Alcatraz Tours, Submarine Tours, Chinatown Tours and Ride the Duck Tours. If you can dream it up–San Francisco’s got it.

So, right about now, you’re wondering how you can ride a duck, aren’t you? Well, the Duck is a W.W. II style amphibious landing vehicle, so you tour the city by land and by sea. Pretty neat.

Of course, you can’t visit San Francisco without riding a cable car or trolley. They’re everywhere. Hop on.

And by all means, never visit a city without sampling the local cuisine. In San Francisco, the sour dough bread is not to be missed. Make sure you eat some in every restaurant you visit, because you’ll never taste anything like it ever again (unless you go back to San Fran).

If you’re traveling with the kids, there’s an aquarium at the bay and a carousel smack dab in the middle of Pier 39. The kids will also love the live entertainment and the street performers.

San Francisco has all the other things you’d expect to find in a big city: museums, theater, opera, symphony orchestra and sports.

It’s all good!

Orlando, Florida

Orlando By Night

Continuing on with fun cities to visit in the United States. Try Orlando, Florida.

Yeah, you already know it’s about Disney, Universal and Sea World. That’s all good, but it is also about nightlife downtown and restaurants galore. One of my favorite restaurants is Vito’s Chop House on International Drive, a steak house with an Italian flair. But that’s only one of many delightful places to dine.

I’d venture to say no matter when you visit, you’ll always be able to find a live concert to attend. There are great venues: Amway Arena, House of Blues, and Hard Rock Live, to name a few.

If you prefer golf, look no further. While the kids are at Universal for the day, you can pick up your clubs and head for any of the Grand Cypress Resort’s Courses, Bay Hill, Shingle Creek or the Hunter’s Creek Golf Course. Again, this is a partial list. There are many more.

If the kids want to see something a little more off the beaten path, try Gatorland or Wet & Wild or Silver Spurs Rodeo.

Most visitors to Orlando aren’t usually looking for cultural pursuits, but if you’re happiest at the theatre, you’ll be pleased to know Orlando hosts a ballet company, opera company, a philharmonic orchestra, a lineup of live plays and it even has a thriving Shakespeare Theatre.

For sports, there’s always the Magic and if you visit at the right time of year, you can see the Citrus Bowl Parade, which kicks off another exciting Citrus Bowl Game.

Gosh, what more could you want?

Memphis, Tennessee

Since I’m encouraging vacation travel on a budget, I’ll rerun part of a previous post I wrote a while back.

If you’re looking to hear the blues, Memphis is the town.

Looking to savor the sweet taste of BBQ? Memphis is a good choice.

A word about Beale Street–I was expecting something similar to Bourbon Street in New Orleans, but Beale Street is much shorter, only extends about a block or two. Therefore, it doesn’t have as many shops, but what it lacks in shopping, it makes up for in good food and fantastic music. The entire time spent on Beale Street is a party for the senses.

There is one important fact to know about BBQ, it comes “wet” or “dry.” At the Pig On Beale, you can order your ribs with a dry rub. Take it from me, if you’re ever at the Pig, dry is the way to go.

The final Memphis highlight that I will touch on has a lot of “soul.”

We only had time to visit one museum and, boy, did we make a good choice–STAX. Museum, with just the right mixture of history, made for a memorable visit.

There are bus tours galore that will take you to Graceland, if you yearn to see the King’s home. We ran out of time.

New Orleans, Louisiana

Most people think if you’re going to visit New Orleans, it should be during Mardi Gras.  That’s great, I admit. The parades are not to be missed and the craziness on the streets adds to the raucus, carefree atmosphere.

But there’s so much more to New Orleans: Bourbon Street, the French Market, the Garden District, eclectic shopping on Royal Street, the fantastic architecture throughout the City and the Riverboats on the Mississippi River. And there’s more, much more.

But for me, it’s all about the food and the music. I’ll never forget savoring the taste of my first beignet at the Cafe du Monde, or the taste sensation of gumbo at the Gumbo Shop in the French Quarter, or authentic cajun food found throughout the City.

And the music?

You can hear music everywhere, at any time, by day, or by night. If you want to experience music at its very best, make plans to attend the Jazz Fest, which is held in April each year. Tents and open-air stages abound with every imaginable type of music: jazz (of course), gospel, oldies, big band, zydeco, blues, country, bluegrass, dixieland, even latin jazz. If you can dream it up, you can probably find it at the New Orleans Jazz Fest. All live. All sensational–and the food at the fair? Every bit as savory as the music.

Philadelphia, PA

Sculling on the Schuykill

If you’re vacationing in the U.S., Philadelphia is a good choice. It’s got a little bit of everything: history, art, sports, Broadway-caliber theaters, nightlife and great food.

It’s an historic city. Just a handfull of sites you can visit: Independence Hall, Betsy Ross House, the Liberty Bell, the Mint, although they don’t give away any of the money.

It houses some great art: Philadelphia Museum of Art, Rodin Museum, Pennsylvania Academy of Fine Arts, Norman Rockwell Museum, and the little known, Mutter Museum. They call this museum “disturbingly informative, heh, heh–the kids will love it–skulls and body parts.

Speaking of kids, a visit to Philadelphia isn’t complete without a trip to the Franklin Institute. Actually the adults enjoy it, too. A little bit of science about every conceivable subject, even sports. And the Philadelphia Zoo is a must.

If you’re into sports, Philadelphia is a real sports town. Their professional teams: Phillies (baseball), Eagles (football), Flyers (ice hockey), and 76ers (basketball). If you’re more interested in water sports, go down to Boathouse Row along the Schuykill River. On weekends, you can see the scullers practicing on the river and if you’re lucky enough to be in town for one of the big regattas, all the better. You can even take a sculling lesson or two yourself, if you have a mind to.

If you plan to visit, the best places to stay are in Center City. South Broad Street has the best hotels and they’re all a short cab ride to all the trendy haunts, theaters and tourist spots.

And NEVER, NEVER visit Philly without sampling an honest-to-goodness cheesesteak. Lord, that’s something not to be missed.

Bruschetta & Crostini

Someone asked me this week, if I had any good recipes for Bruschetta. Here they are. If you use a smaller loaf of bread, like French bread, the tasty morsels automatically become Crostini. You can serve them as an appetizer, while waiting for the main course to be served, or eat them right along with your meal. Superb!

Bruschetta – Tomato & Basil

Use 8 thick slices of Italian bread

Rub both sides with 2 large halved cloves of garlic OR sprinkle sparingly with garlic powder

Brush both sides with virgin olive oil

Toast the bread or, if you prefer, broil in oven-making sure to brown both sides.

Combine:

4 ripe tomatoes, cored and diced

½ cup fresh basil, chopped

Salt, pepper

Spread on bread or serve separately so that each guest can prepare their own.

Bruschetta – Tomato & Mozzarella

Prepare Italian bread as above, but DO NOT toast.

Top each slice of bread with shredded mozzarella. Broil till the cheese is bubbling. Remove from oven and top each slice with diced fresh tomato and fresh or dried oregano. (Go easy on the oregano)

Bruschetta – Garlic, Butter and Cheese

Use 8 thick slices of Italian bread

Spread with thin coat of butter (real butter)

Sprinkle with garlic powder (sparingly)

Sprinkle with parmesan cheese covering the entire surface

Broil until golden

Top each slice with diced fresh tomatoes or eat “as is” with no tomato added.

Good For The Waistline, Good For The Pocketbook, Too

It’s time to cut out some of the fast food drop-ins on your way home from work. Notice I say some, because there are days when you’re just too tired to cook, or you don’t have time to cook, or you’ve got to have a greasy cheeseburger, no matter what!

On those days when there’s no getting around it, be prepared. It doesn’t have to be a fast food burger. I buy a pound of ground beef, but instead of freezing it, I shape it into four burgers (very simple–nothing whatsoever added to it). Those individually wrapped burgers are always in my freezer. I freeze burger buns, too. Instant meal!

And if you want to make it healthier, smother every burger with tomato, lettuce, pickle, onion and a little cheese. The more lettuce, the better. It adds crunch.

Another thing you might want to consider is, once the kitchen is cleaned after dinner, put up the “Closed” sign. I don’t mean literally, but I remember my mother wiped and dried her kitchen sink. She shined the faucet and folded the towel and, believe me, you didn’t mess up her sink after that. It was her way of closing the kitchen for the night. It was a good policy. No one in our family had a weight problem back then.

And, incidentally, if you want to read a book about losing weight the fun way, try reading a book written by Janice Taylor titled All Is Forgiven, Move On. I mention her book because one of her suggestions is to close your kitchen at 9:20 p.m. every night.  My mom was doing that back in the 50’s.

6 Ways To Beat The Cost Of Groceries

  1. Don’t throw those leftover veggies in the garbage. Save them in a large container in the freezer. Keep adding to it. Leftover beef and chicken can be collected in the same container. Chop meat into cubes before adding. When the container is full, dump it into a pot of broth (chicken, beef or vegetable). Better still use some low-sodium bouillon cubes. It’s such a healthy meal, you don’t have to feel guilty about serving it with a big loaf of Italian or French bread.
  2. Before you write a single word on your weekly menu-planning list, (You do make a list, don’t you?) check the refrigerator for leftovers. Use the leftovers. Be honest. How many times have you forgotten about them and ended up throwing them away? You will now vow to never to that again!
  3. At the beginning of every week, make your menu list. What exactly are you planning to have for lunch and dinner during the coming week? You’ve already checked the frig, right? Now it’s time to look in the freezer. That’s your starting point. Build a meal around something you already have in the freezer. If it’s meat, all you’ll need are the veggies to go with it. If you have a bag of frozen veggies, decide what meat or fish you will prepare. Or be a vegetarian for a night.
  4. While you decide what will be on your menu planner, you need to have a second list right alongside it. This list is your grocery list. (Maybe you already have one started. I tend to write things down as I use the last one during the week, i.e. eggs, milk, cereal) List everything you will need at the supermarket to complete the meals you are planning to prepare for the coming week. When you walk into the supermarket–stick to the list. You’ll be surprised how much money you’ll save when you enter the store armed with a plan.
  5. If you shop once a week, try shopping every other week. Actually, someone told me to try this, but I didn’t think it would save me any money. Surprise, surprise. It did. I’m not sure how or why, because my bi-weekly shopping list was a whole lot longer than my weekly list, but at the end of the month, I had saved approximately $40.00. I am a family of one, so that’s pretty darn good. [Caution: If you try this, make sure you have enough food in the house to last for two weeks. That’s the tricky part.]
  6. Finally, don’t forget about pasta. It’s inexpensive and filling. When I was growing up, Sunday was always Pasta Day. The beauty of Pasta Day is that there are all kinds of shapes and sizes of pasta to choose from, so it feels like a new meal every week. Switch it out every week: ziti, rigatoni, spaghetti, penne, to name a few. The added bonus–pasta is quick and easy to prepare. [Hint: After draining your pasta in a collander, do not rinse it with water. The outer layer of starch on the pasta is what makes the sauce stick to it. If you rinse–the sauce slides off.]

So, there you have it. Six suggestions–give them a try.

10 Ways To Stretch Your Dollar

These are things I have been doing to ease the pain of high gas prices, high food prices and the devaluation of the dollar.

  1. I’m cooking more and dining out less.
  2. When I do eat out, I go to a restaurant that has a coupon offer. I doggy bag what I can’t eat. Sometimes that doggy bag becomes tomorrow’s lunch.
  3. I’ve begun to use coupons at the supermarket again. I slacked off for a while, but I’m back.
  4. I don’t drive out of my way, but when I can, I purchase gas at Costco. A membership card at any of the warehouse stores has gotten more attractive, even if you don’t have a large family. Share the cost of the card with a friend–even better. Then meet on a Saturday morning and enjoy each other’s company while you shop and gas up.
  5. I’ve always bought name brand items, but I’m giving generics a shot when they’re available.
  6. I’m reading more and looking at less TV. Gone are the days when I have the TV on as background noise. And I remember to close the lights when I leave a room.
  7. I’m only buying things I need. Impulse shopping has come to an abrupt halt. And if it’s not on sale, it’s not in my cart. I’ve also sworn off shopping on the internet and the TV.
  8. I make a special effort not to throw food away. In the past, I’ve forgotten certain foods were in the refrigerator. I’m now keeping an eagle eye on all leftovers. Nothing gets wasted. Every last morsel gets eaten.
  9. I’m shopping less frequently at the supermarket, too. I’ve always loved eating breakfast at dinnertime, and eggs are almost always a staple in my refrigerator. So, I’m eating scrambled eggs and toast in the p.m. again once in a while. Tuna fish is another staple I had been neglecting. I forgot how much I love tuna salad slathered on a crisp hoagie roll with lettuce and mayo. Yum.
  10. And lastly, I set my air conditioning a few degrees higher this summer. It’s still more comfortable inside than outside. You’d be surprised how much you save this way. As an added bonus, lowering that thermostat conserves energy overall.

Some of these things, I’ve always done. I started as a youngster, because my mother insisted on most of these conservation rules. Even when gas prices were $.50 a gallon, my mom was plotting her shopping course, never backtracking, always hitting her errands on a pre-ordained route. Consequently, I’ve always done that myself.
